The purpose of this thesis is to find out how a bartender maintains the quality of cocktails that can be enjoyed by guests who order cocktails with the best quality and taste in each cocktail according to the Standard Recipe Cocktail that has been set in the Fairway Lounge Bar. This final project problem formulation procedures for handling breakfast in the restaurant restaurant at the Denpasar Dreamland Resort Bali hotel. This final project data collection technique uses participant observation technique that is the researcher is directly involved in the object of research in Rayunan restaurant in the hotel Denpasar Dreamland Resort Bali. The result of this final project is that the procedures for handling breakfast in the restaurant range include: Breakfast preparation, at breakfast and at closing.
